FAQs

 

Cooking

  • The basic Adda Veggie cooking instructions are:

    1. Soak a 24-serving foodservice pack of Protein Crumbles in 2.5 cups of water for 5 minutes, stirring halfway.

    2. Stir Adda Mix into the hydrated Protein Crumbles. Mix well.

    3. Add in 12 cups of your prepared veggie. Mix well.

    4. Leave as a ground crumble, or form into patties/balls with your desired scoop size.

    5. Heat a tilt skillet (or flat top, or steam kettle) with cooking oil over medium-high heat. Add mix and leave crumbles to cook undisturbed until golden brown. Ensure cooking surface is uncrowded. Once browned, flip using a spatula and continue to cook. Add ½ cup oil and chop with spatula until mixture appears evenly browned and crumbly.

      Or bake at 350°F for 15-20 minutes until slightly browned and crispy.

  • Absolutely! Adda Veggie is incredibly versatile and we have a number of recipes formulated with pre-shredded carrots, frozen spinach and frozen sweet potato cubes. Look for pre-diced onions, riced cauliflower, and diced mushrooms from your produce distributor to further cut down on prep time.

  • Absolutely! All of our K-12 recipes include baking instructions, both for conventional and combi ovens.

  • Our catalog of foodservice recipes is an excellent resource to find Adda Veggie recipes, all of which are scaled to our 24-serving foodservice pack size. For serving hundreds of people, we recommend the following meal ideas:

    Adda Veggie is free of the top 9 allergens, gluten-free, and made with non-GMO ingredients. It also uses no fillers, no artificial flavors, no added sugar and no preservatives, making it a great choice for K-12 schools, colleges & universities and healthcare facilities.

    Adda Veggie is a shelf-stable dry mix, making it cost-effective to ship and store. It is a versatile mix – use with a variety of veggies in a number of different ways (ground crumble, patties, meatless balls, falafels) in a wide variety of cuisines.

  • Yes! Adda Veggie is free of the top 9 allergens (milk, wheat, eggs, peanuts, tree nuts, fish, shellfish, soy, and sesame). Our product lineup is also 100% vegan, non-gmo, and gluten-free.

  • No! We do not recommend using the protein crumbles without the Adda Mix. The Adda Mix contains additional protein, fiber-rich binders, and seasoning. Without the Adda Mix, your vegetables will bind poorly to the protein crumbles, and the resulting dish will be dry and under-seasoned.

  • Yes! Our mixes are specially designed to bind to veggies to make a delicious ground crumble. Our recipes use veggie options that can be purchased pre-prepared such as riced cauliflower, grated carrots and mirepoix.

Veggies

  • Adda Veggie can be prepared with a wide variety of raw and cooked vegetables. To ensure your veggies integrate nicely with the mix, we recommend using finely chopped, diced, riced, or grated vegetables.

    To get you started, here is a selection of our team’s favorite flavor combos:

    • Original + Grated Carrots

    • Original + Riced Broccoli

    • Chipotle Adobo + Chopped Mushrooms

    • Indian Masala + Roasted Sweet Potato + Spinach

    • Italian Sausage Blend + Riced Cauliflower

    • Breakfast Sausage Blend + Chopped Mushrooms

  • Yes! Veggie blends work great with Adda Veggie and are an easy way to add more flavor and complexity to your dish. Using multiple vegetables also allows you to reduce food waste in your foodservice operation. We recommend repurposing salad bar leftovers like baby spinach and grated carrots into veggie patties or a ragu.

    Need some inspiration? Here are some of our favorite veggie combos:

    • Sweet potato + riced cauliflower

    • Butternut squash + spinach

    • Kale + caramelized onions

    • Shiitake mushrooms + bell peppers

  • Not that we know of! Some of our mixes taste better with specific veggies, but we encourage you to experiment with different flavor profiles to fit your operation’s needs.

Storage

  • Adda Veggie is shelf-stable and can be kept in ambient storage conditions for up to 12 months.

  • The prepared, uncooked mix can be refrigerated for up to 24 hours or frozen for later use. Cooked crumbles, patties, or other Adda Veggie dishes can be refrigerated for 2-3 days.

  • Yes, meals prepared with Adda Veggie can be held warm for up to four hours with minimal change to the taste or texture.

Troubleshooting

  • To form patties and meatballs, we recommend using a #8 scoop (#10 or #12 for smaler meatballs or sliders). Push the mix firmly into the scoop and then mold into the desired shape with your hands (or use a “smash patty” technique on the flat top).

    If you find it difficult to form your patties or meatballs, start by chilling the prepared Adda Veggie mixture for 15-30 minutes. You can also try dipping your hands in water to prevent sticking, or consult the notes at the bottom of some of our recipes for additional tips.

    If you are still experiencing issues, reach out to the Adda Veggie team and we can work with you to find a solution.

  • If you would prefer a firmer texture, you can use a higher mix-to-veggie ratio (we’d suggest using about 20% less veggie). You can also swap in veggies that release less water during cooking such as grated carrots or riced cauliflower.

    Utilizing pre-cooked vegetables such as roasted eggplant, grated cooked beets, or sautéed leafy greens are also great ways to achieve a firmer texture.

Other

  • Though pea protein can be a great source of protein in sweet dishes and snacks, Adda Veggie was designed solely for savory applications.

  • After receiving her PhD in Formulation Science, our founder Trishna worked to create vegan analog products of milk, yogurt, cheese and meats for several years. That’s when it dawned on her that shaping plants to try to mimic animal products was unnatural. These products were highly processed, expensive, and they weren’t always very healthy. Plus, many meat and dairy alternatives were formulated with common allergens such as wheat, gluten, nuts, and soy, which made them inaccessible for many individuals.

    Trishna started Down to Cook because she knew it was time to accept plants for who they are! To this day, we are committed to making healthy and accessible plant-based food that highlights fresh vegetables. We invite you to join us!
