The basic Adda Veggie cooking instructions are:
Soak the Protein Crumbles in ½ cup of water for 2 minutes.
Stir Adda Mix into the hydrated Protein Crumbles. Mix well.
Add in 2 cups of your prepared veggie (see here for veggie prep ideas). Mix well.
Form into patties or balls by squeezing with your hands. Or leave as a ground crumble.
Heat a skillet with 2 tbsp of cooking oil over medium-high heat. Cook until evenly browned, roughly 2 minutes per side. Cover and cook on low heat for an additional 3-4 minutes.

Here are a couple super-quick meal ideas:
Cauliflower crumble: If you don’t want to deal with any veggie prep, grab a bag of riced cauliflower (fresh or frozen). Make an Adda Veggie cauliflower crumble following the Adda Veggie package instructions. You can use our Garlic flavor and add tomato sauce for a quick bolognese or use Chipotle and make it into a taco filling.
Zucchini latkes: Coarsely grate one large zucchini with a box grater. Squeeze out the extra water and follow the package instructions to make zucchini pancakes. Cook in a skillet over medium-high heat until browned on both sides. Works best with Original or Garlic.

There are plenty of options for folks who don’t own a food processor (or don’t want to use one). Here are some of the vegetables that you can prep by hand:
Riced cauliflower / riced broccoli. Nowadays, you can now find riced veggies (frozen or fresh) at most stores. Simply defrost, squeeze out any extra water, and you’re in business! If making patties with riced cauliflower, we recommend pre-roasting with some oil and salt for 10 minutes at 375°F (or you can saute for a few minutes).
Mushrooms. Just dice ‘em up.
Zucchini. Grate with the coarse side of a box grater, and squeeze out any extra water.
Carrots. Grate with the coarse side of a box grater. Pairs well with Chipotle!
Eggplant. Dice into quarter-inch cubes. Then toss with oil and salt and roast for 20 minutes at 375°F.
Spinach. Chop coarsely. That’s it!
Sweet potato. Wrap the whole potato in plastic wrap and microwave on high for 4 minutes. Then peel by hand and mush it up with a fork. Note: we don’t recommend using sweet potato by itself -- try a combo with riced cauliflower!

Not that we know of! We list the top recommended veggies on the back of the package, for each flavor. So start there, but feel free to experiment with other veggies! One note is that we do not recommend that you use potatoes / sweet potatoes alone because it creates a very mushy consistency – instead try mixing them with other veggies.

Feel free to mix-n-match veggies! Simply prep 2 cups of vegetables per pack of Adda Veggie.
For example, if you wanted to make veggie patties using spinach and riced cauliflower, just prepare roughly 2 cups worth of the veggie mixture, and then follow the package cooking instructions.
Some of our favorite veggie combos are sweet potato + cauliflower, butternut squash + spinach, and beet + cauliflower. We also love using up our leftover veggies at the end of the week by elevating them into tasty Adda Veggie burgers or a delicious taco filling.

Yes! Each package of Adda Veggie makes 2 cups of mix, which is designed to be added in a 1-to-1 volume ratio with veggies. To split the mix, we recommend preparing the mix following instructions 1 and 2 and then dividing it up.
For example, if you wanted to make 2 broccoli burgers today and eggplant meatballs tomorrow, you’d simply use 1 cup of mix today with 1 cup of riced broccoli and store the other cup of mix in the refrigerator to use the next day with 1 cup of eggplant.

The prepared, uncooked mix can be stored for 2 days refrigerated. Cooked patties can be refrigerated for 2-3 days or kept frozen for 2-3 weeks.

Yes, we have a number of baked Adda Veggie recipes that we love! Check out our Mixed Veggie Nuggets recipe for a delicious and easy baked Adda Veggie recipe. Our Adda Broccoli Lasagna is also a great option. We’ve baked lots of other dishes such as mushroom patties and mini-yellow beet muffins. To get a nice crisp when you bake, you’ll want to bake at 375°F for at least 20 minutes, depending on the veggie.
Here’s a quick baked broccoli meatless balls recipe:
Preheat oven to 450F.
Line 1 sheet pan with parchment paper.
Roll out 12 meatless balls, drizzle (or brush) with oil and bake for 15-20 minutes.

Our founder Trishna has worked in plant-based food for several years, creating vegan analog products such as milk, yogurt, cheese and meats that attempted to mimic their animal-product counterparts. That’s when it dawned on her that shaping plants to try to mimic animal products was unnatural. These products were highly processed, which made them expensive, and they weren’t always very healthy.
She started Down to Cook because she knew it was time to accept plants for who they are! We are committed to making healthy and accessible plant-based food that uses fresh vegetables.
