Cauliflower Ragù

An easy weeknight dinner that the whole family will love!

Just add some chopped mushrooms or riced cauliflower, make your "meaty" tomato sauce and serve over pasta. It makes a complete meal that’s packed with veggies and protein.

 

Ingredients:

  • 1 package Adda Veggie Original Blend or Herby Roasted Garlic

  • 2 cups riced cauliflower (alt: 8 oz cremini mushrooms, diced)

  • 3 Tbsp olive oil

  • 1 jar tomato sauce (we recommend Rao’s marinara sauce)

  • 1 package spaghetti

  • Basil, for garnish

Instructions:

  1. Cook spaghetti according to package directions.

  2. Prepare full package of Adda Veggie by soaking Protein Crumbles in 1/2 cup of water for 2 minutes, stirring halfway. Then stir in Adda Mix.

  3. Stir riced cauliflower into prepared Adda Veggie mix.

  4. Add 2 Tbsp of olive oil to a skillet over medium-high heat. Press out the mix evenly on the pan with a spatula. Cook for 3 minutes, then turn over and cook for another 2 minutes. Then chop with a spatula, add 1 additional Tbsp of oil and sauté until crispy, stirring and chopping often.

  5. Remove skillet from heat. Add tomato sauce and fold in the cooked Adda Veggie crumble. Serve over spaghetti and garnish with basil.
