This is our veggie-based "meatloaf" that’s perfect for a classic dinner night. Rich and satisfying, packed with mushrooms, onions, carrots and celery. So delicious, you’ll be sure to have seconds. And so easy that you’ll want to add it to your weekly rotation!

Ingredients:
1 package Adda Veggie Original Blend
1 lb mushrooms, sliced thin (~2 cups)
1/3 cup onion, diced to ¼”
1/3 cup carrot, peeled and diced to ¼”
1/3 cup celery
1 Tbsp ketchup
2 Tbsp extra-virgin olive oil (for the pan)
½ cup mushroom stock
Cooking oil spray
For the glaze:
½ cup ketchup
½ cup chili sauce (or sub with ½ cup BBQ sauce or ½ cup sriracha)
2 Tbsp brown sugar (optional)
1 Tbsp vinegar (white or apple cider vinegar)
Salt and pepper, to taste
Instructions:
Preheat oven to 350°F. Spray a nonstick, lined,1-quart sized loaf pan with cooking spray and set aside.
In a large nonstick skillet, warm the olive oil over medium-high heat, add the diced onions, carrots, and celery to the pan, and sauté until onions become translucent (about 6-8 minutes), stirring frequently.
Add the thinly sliced mushrooms and the ketchup to the pan. Stir to combine, and continue to cook until the mushrooms are golden brown, about 5 minutes. Then remove from heat and hold in the skillet.
Prepare full package of Adda Veggie by soaking Protein Crumbles in 1/2 cup of mushroom stock for 2 minutes, stirring halfway. Then stir in Adda Mix.
Add your sautéed veggies to the prepared Adda Veggie and mix together until evenly combined.
Firmly and evenly press the mixture into the loaf pan.
Place the loaf pan in the center of the oven and bake for 25-30 minutes, until the loaf is firm, fully cooked through, and golden brown on the top.
In a small bowl whisk together all the ingredients for the glaze. Remove the loaf from the oven and carefully spread the glaze on the top of the loaf. Return the glazed loaf back to the center of the oven, and bake for another 5-10 minutes, until the glaze warms up and sets.
Next, remove the loaf from the oven, and let rest for about 5 minutes, before slicing and serving. Garnish with fresh chopped parsley and/or other herbs
